I actually really like Mavuika as a character.
Reactions have been quite polarized, but I quite enjoyed the emotional ride that was the Natlan AQs, and found Mavuika to be a very intriguing Archon.
She was the first ruling Archon we encountered that actually took direct charge in ruling her people.
Mavuika did what none of the previous gods did - rule well as powerful, steadfast leader, without any outside intervention. Not only is she an inspiration to her people, but what makes her really stand out to me is how she directly engages and works with her people. It was quite an interesting shift.
We've yet to see a central character kick ass on this level.
Honestly? From time to time, I really do appreciate a character that just kicks a lot of ass with style. And Mavuika does that on the Archon level. It's one-dimensional, and I understand it can feel cheesy and overdone. But I for one found it awesome.
One-dimensional characters work, but only if you can appreciate that one dimension.
One of the critiques is that Mavuika is currently all-capable, flawless, and has a one-dimensional personality, which makes her a boring trope. I think that's a valid take. But Genshin is no stranger to these kinds of characters. How much we like them really depends on how we appreciate their personalities and style. Take Zhongli. Powerful. Stylish. Stoic. No apparent flaws. Yet, his groundedness can add a sense of wisdom and mystique, making him effortlessly cool.
Many other popular characters' appeal comes from one defining facet. Cyno's deadpan humor. Raiden's quirky "gap moe". Citlali as the classic tsundere. But if it suits your tastes (sure as hell suits mine), it works. Are these a cheap tactic to appeal to the audience? Maybe, but it works well.
If you're not a fan of Mavuika's personality and/or style, she probably doesn't have much to offer. But I actually find her personality gives her incredible strength a groundedness that evokes a sense of mastery. Everything she is, she's earned for herself through hard, tireless work. I can respect that.
At the end of the day...
There's no other Archon that can make an explosive entrance, turn freaking super saiyan, get the job done, then put on her shades and ride off into the sunset on a goddamn motorcycle. It might seem silly, it might be ridiculous, but I love it. She's got style, and knows how to bring the hype. I say let her cook.

Note: I'm just going to address some claims being made in the comments here.
- Claim 1: I'm putting down the other Archons.
- I said Mavuika was the first Archon we met that ruled her people directly. That doesn't mean the other Archons are somehow inferior.
- Claim 2: I'm putting down or reducing other characters just to make her look good.
- Nowhere did I imply these characters were weak, or intend to downplay them. I think they are good, well-liked characters with defining traits that work well for them. The point I was making was Mavuika falls in a similar category - in that whether you like those characters or not depends a lot on whether you like those traits. You can disagree with my use of the term "one-dimensional". But I did not intentionally downgrade them just to make a point.
